Almond Butter Cookies
Whether it’s chocolate chip, sugar or peanut butter, cookies are deliciously comforting, practically irresistible—and bad news if you are trying to cut down on highly processed and fat filled foods.
To help you with this delicious dilemma, here’s a recipe for tasty cookies that are made with healthy ingredients and take only 5 minutes to prep!
Ingredients
 125g Almond Butter
110g Honey
1 Egg
1 level teaspoon of vanilla essence
1 level teaspoon of baking soda
40g (4 large squares) dark chocolate

Method
Preheat the oven to 180 degrees
In a mixing bowl, beat together the egg, honey, almond butter, vanilla essence, baking soda and salt until smooth and creamy.
Fold in 1/3 of the chocolate chunks
Drop tablespoon sized balls of dough onto a baking a baking sheet lined with parchment paper, top each cookie with extra chocolate chunks.
Bake for 10-12 minutes or until cookies turn brown underneath; they will be puffy.
Cool on the baking sheet for 10 minutes and then transfer to a wire rack to cool completely.
Makes approximately 9 large cookies – 150 calories per cookie
