Almond Butter Cookies

Whether it’s chocolate chip, sugar or peanut butter, cookies are deliciously comforting, practically irresistibleā€”and bad news if you are trying to cut down on highly processed and fat filled foods.

To help you with this delicious dilemma, hereā€™s a recipe for tasty cookies that are made with healthy ingredients and take only 5 minutes to prep!

Ā 125g Almond Butter

110g Honey

1 Egg

1 level teaspoon of vanilla essence

1 level teaspoon of baking soda

40g (4 large squares) dark chocolate



Preheat the oven to 180 degrees

In a mixing bowl, beat together the egg, honey, almond butter, vanilla essence, baking soda and salt until smooth and creamy.

Fold in 1/3 of the chocolate chunks

Drop tablespoon sized balls of dough onto a baking a baking sheet lined with parchment paper, top each cookie with extra chocolate chunks.

Bake for 10-12 minutes or until cookies turn brown underneath; they will be puffy.

Cool on the baking sheet for 10 minutes and then transfer to a wire rack to cool completely.

Makes approximately 9 large cookies – 150 calories per cookie
