Deliciously fluffy & light cupcakes!

Who doesn’t love a chocolate cupcake?? Well this recipe allows you to have your cupcake without having to feel guilty about it! They are also the perfect treat for your children. They take 5 minutes to whizz up in the blender so if you don’t count yourself as a pro in the baking department then this is the perfect recipe for you!

The average store bought chocolate muffin has over 400 calories containing approximately 4.5 tsp of free sugar. The World Health Organisation recommends us to consume no more than 6 teaspoons of free sugar a day so if your planning on eating anything other than a muffin in one day, you’re probably going to exceed this!

These cupcakes contain 100 calories & about 1.5 tsp of free sugar which means they will fit into your day’s eating without causing a sugar spike. This means that your energy levels will stay consistent after this lovely treat and you won’t feel the need to seek out another sugary fix as soon as you’re finished. They are also packed full of nutrients thanks to the almonds, eggs and raw cacao so the next time you need a chocolate fix with your tea…make the right choice!

75g of ground almonds
1.5tsp of baking powder
4tsp of raw cacao powder
2 eggs
70g of honey
1tsp of vanilla extract
1square of dark chocolate chopped & sprinkled on the cupcakes just before they go in the oven.

Makes 8-10 cupcakes

Method: Preheat the oven at 150 degrees.Throw everything (except the dark chocolate) into a blender & blend until fully mixed. Pour into cupcake cases, fill each case about 3/4 full. Sprinkle dark chocolate on top. Pop into the oven at 150 degrees for 12-15 minutes.
