170g jar of Cashew nut butter
300g pitted dates
50g coconut oil
1-2 tablespoons of water
120g dark chocolate
Blend the dates, nut butter and coconut oil in a blender.
Add some water (a little at a time) until you have a nice paste.
Roll the mix into small balls and place them on a tray lined with baking paper.
You should make approximately 25-30 balls depending on size.
Place the tray in the fridge for 20-30 minutes.
Melt 120g of dark chocolate and cover each of the balls in the melted chocolate.
Place them back on the tray and into the fridge until the chocolate has hardened.
Store them in zip lock bags in the freezer.
Take them out only a few minutes before you’re planning to eat them!
